Ingredients
1 lb steak (sirloin or ribeye)
10 oz rotini pasta
4 cloves garlic, minced
1 cup grated parmesan cheese
1 cup heavy cream
3 tbsp butter
1 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1 tbsp chopped fresh parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook rotini until al dente. Drain and reserve 1/2 cup of pasta water.
2. Cut steak into bite-sized pieces and season with salt, pepper, and Italian seasoning.
3. In a skillet over medium-high heat, heat butter and olive oil. Sear steak in batches for 1-2 minutes per side. Set aside.
4. Lower heat to medium. Add garlic and stir for 30 seconds. Pour in heavy cream and stir in parmesan. Let simmer for 3-5 minutes.
5. Add steak back into the pan and stir to coat with sauce. Mix in rotini. Add pasta water if sauce is too thick.
6. Garnish with parsley and extra parmesan if desired. Serve hot.
Notes
Use freshly grated parmesan for best melt and flavor.
Don’t overcrowd the pan while searing the steak or it won’t brown.
Reserve pasta water before draining in case you need to loosen the sauce.
