Description

This steak and queso with rice recipe combines juicy, seasoned steak, creamy cheese sauce, and fluffy rice for the perfect comfort food. An easy dinner idea packed with flavor, ideal for busy weeknights or special meals.


Ingredients

1 lb ribeye steak

2 cups cooked white or brown rice

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

2 tbsp cream cheese

1 cup milk or cream

1 small onion, chopped

2 cloves garlic, minced

1 tsp cumin

1 tsp smoked paprika

2 tbsp olive oil

Salt to taste

Pepper to taste

2 tbsp fresh cilantro, chopped (optional)


Instructions

1. Rinse the rice and cook according to package instructions with a pinch of salt and a splash of olive oil. Fluff and keep warm.

2. Pat the steak dry and season with salt, pepper, cumin, and smoked paprika.

3. Heat olive oil in a skillet over medium-high heat and sear the steak for 3–4 minutes per side until desired doneness. Rest, then slice thinly against the grain.

4. In a saucepan, melt butter and sauté chopped onions and minced garlic. Add milk or cream, then slowly stir in shredded cheeses until smooth and creamy.

5. Plate the rice, top with steak slices, and drizzle queso over everything. Garnish with cilantro if desired. Serve immediately.

Notes

Let the steak rest before slicing to keep it juicy.

Add a splash of milk when reheating queso to keep it smooth.

Thinly slicing against the grain ensures tenderness.
