Ingredients

2 cups fresh strawberries

1 1/2 cups all-purpose flour

1/4 cup granulated sugar

1/2 cup cold unsalted butter

2 tablespoons cold water

2 cups whole milk

1/3 cup honey

3 large egg yolks

2 tablespoons cornstarch

1 teaspoon vanilla extract

1/2 cup powdered sugar

2 tablespoons fresh lemon juice


Instructions

1. Prepare the tart shells by mixing flour, sugar, and salt, cutting in butter, adding water, and pressing dough into tart pans. Bake until golden and cool.

2. Heat milk and honey in a saucepan until just simmering. In a bowl whisk yolks, cornstarch, and sugar. Slowly temper with hot milk, return to saucepan and cook until thickened. Stir in vanilla and cool.

3. Fill cooled tart shells with custard and arrange sliced strawberries decoratively on top.

4. Mix powdered sugar and lemon juice to make drizzle. Drizzle over tarts just before serving.

Notes

Use a mild honey like clover or wildflower for best flavor.

Tarts are best served the same day for maximum crispness.
