Description

Spooky Spaghetti & Cheesy Monster Meatballs is the ultimate Halloween pasta dinner. Featuring juicy mozzarella-stuffed meatballs, creepy olive eyes, and a blood-red marinara over spaghetti, it’s a fun, festive, and kid-friendly recipe perfect for your spooky night. Great for parties, trick-or-treat dinners, or anytime you want pasta with a playful twist.


Ingredients

1 lb ground beef

1/3 cup Italian breadcrumbs

1 large egg

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

1/2 tsp black pepper

4 oz mozzarella cheese, cut into cubes

12 oz spaghetti noodles

3 cups marinara sauce

1/4 cup black olives, sliced into rounds

1/4 cup green olives, stuffed and sliced into rounds

2 tbsp fresh parsley, chopped (optional)


Instructions

1. In a mixing bowl, combine ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until just combined.

2. Take a scoop of the meat mixture and press a mozzarella cube into the center. Roll to form a ball, sealing the cheese inside.

3. Place meatballs on a parchment-lined baking sheet and bake at 400°F (200°C) for 18 to 20 minutes.

4. While the meatballs cook, boil spaghetti noodles until al dente, then drain and toss with olive oil to prevent sticking.

5. Heat marinara sauce in a large pan over medium heat. Add baked meatballs and simmer for 5 minutes.

6. Serve spaghetti topped with meatballs. Add black and green olive slices on top of each meatball to create “monster eyes.”

7. Garnish with chopped parsley and serve warm.

Notes

Use plant-based meat for a vegetarian twist.

Be sure mozzarella is fully sealed inside the meatballs to prevent leaking.

Double the batch for parties—these meatballs freeze beautifully.
