Ingredients

lbs chicken thighs

1 cup Greek yogurt

3 cloves garlic, grated

2 tbsp lemon juice

1 tsp smoked paprika

½ tsp cayenne pepper

2 tbsp olive oil

1½ tsp salt

½ tsp black pepper

lbs baby potatoes

¾ cup feta cheese

2 tbsp fresh dill, chopped

23 tbsp heavy cream or plain yogurt


Instructions

1. In a bowl, whisk together Greek yogurt, lemon juice, garlic, smoked paprika, cayenne, salt, pepper, and olive oil.

2. Add chicken thighs and coat thoroughly in the marinade. Cover and refrigerate for at least 1 hour or overnight.

3. Preheat the oven to 425°F (220°C). Halve baby potatoes, toss them with olive oil, salt, and pepper, then spread on a baking sheet.

4. Roast potatoes for 25–30 minutes or until crispy and golden.

5. Heat a skillet or grill pan over medium-high heat. Cook chicken thighs for 5–6 minutes per side until cooked through and charred. Let rest before slicing.

6. In a food processor or blender, blend feta, cream or yogurt, and fresh dill until smooth and creamy.

7. Spread dill feta cream on plates. Add sliced chicken and crispy potatoes on top. Garnish with more fresh dill and serve warm.

Notes

This dish tastes even better after marinating overnight.

If using chicken breasts, pound them evenly for best results.

Heavy cream gives a richer feta sauce, but plain yogurt keeps it lighter.
