Ingredients
2 jalapeños
2 garlic cloves
1/4 cup apple cider vinegar
2 tablespoons brown sugar
2 tablespoons tomato paste
1 teaspoon smoked paprika
1/2 teaspoon salt
2 tablespoons olive oil
1/4 cup water
1 habanero or 1 chipotle in adobo (optional)
Instructions
1. Roughly chop jalapeños and garlic. Use gloves if handling habanero.
2. In a saucepan, heat olive oil over medium heat. Sauté peppers and garlic for 3-5 minutes until softened.
3. Add tomato paste, smoked paprika, and brown sugar. Stir and cook for 1 minute.
4. Pour in apple cider vinegar and water. Simmer for 10 minutes.
5. Remove from heat and let it cool slightly.
6. Blend the mixture until smooth and thick. Add extra water if needed.
7. Pour into a jar or bottle and refrigerate for at least 1 hour before serving.
