Ingredients
2 chicken breasts or thighs
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
4 cups chicken broth
4 ounces cream cheese
2 tablespoons soy sauce
1 tablespoon chili paste (like sambal oelek)
2 portions ramen noodles
2 green onions, chopped
1 teaspoon sesame oil
1 tablespoon olive oil
to taste salt
to taste pepper
Instructions
1. Season chicken with salt and pepper, then sear in olive oil over medium heat until golden and cooked through. Remove and set aside.
2. In the same pot, add sesame oil. Sauté minced garlic and ginger until fragrant.
3. Pour in chicken broth, soy sauce, and chili paste. Bring to a simmer and whisk in cream cheese until smooth.
4. Add ramen noodles and cook according to package directions until tender.
5. Slice cooked chicken and return to pot or place on top of ramen. Garnish with green onions and a drizzle of sesame oil. Serve hot.
Notes
Use fresh ramen noodles if available for better texture.
