Ingredients
2 boneless skinless chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
2 tablespoons butter (divided)
3 garlic cloves, minced
1 cup heavy cream
1 cup freshly grated Parmesan cheese
8 ounces linguine
Salt, to taste
Black pepper, to taste
2 tablespoons chopped parsley
Instructions
1. Pat chicken breasts dry and coat them with Cajun seasoning evenly on both sides.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Add chicken and sear for 5–6 minutes per side until golden brown and cooked through. Remove and set aside.
3. Bring a pot of salted water to boil. Cook linguine according to package instructions. Reserve 1 cup pasta water before draining.
4. In the same skillet, reduce heat and melt the remaining 1 tablespoon butter. Add minced garlic and sauté for about 1 minute until fragrant.
5. Pour in heavy cream and stir constantly. Gradually add in Parmesan cheese and stir until sauce thickens. Season with salt and pepper to taste.
6. Add cooked linguine into the skillet and toss with the sauce. Use reserved pasta water to loosen the sauce if needed.
7. Slice the Cajun chicken and serve on top of the pasta. Sprinkle with chopped parsley and serve immediately.
