Description

This spicy Cajun chicken rigatoni in creamy mozzarella Alfredo is a bold, comforting pasta dish made with tender chicken, Cajun spices, and a rich cheese sauce. Perfect for weeknight dinners or meal prep, it’s loaded with flavor and easy to prepare. Keywords: Spicy Cajun Chicken Pasta, Creamy Mozzarella Alfredo, Rigatoni Pasta Recipes.

Ingredients

1 pound rigatoni pasta

1 pound boneless skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

3 cloves garlic, minced

1 ½ cups heavy cream

1 cup shredded mozzarella cheese

½ cup grated parmesan cheese

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons butter

2 tablespoons chopped fresh parsley

Instructions

1. Bring a large pot of salted water to a boil and cook the rigatoni until al dente. Drain and set aside.

2. Cut the chicken breasts into bite-sized pieces and toss with Cajun seasoning.

3. In a large skillet, heat olive oil over medium-high heat and sear the chicken until golden and cooked through. Remove and set aside.

4. In the same skillet, reduce heat to medium and melt butter. Sauté the garlic until fragrant.

5. Pour in heavy cream, stirring constantly, and let it simmer for 2–3 minutes.

6. Add mozzarella and parmesan cheese, stirring until melted into a creamy sauce.

7. Add the cooked pasta and chicken to the skillet, tossing until fully coated.

8. Season with salt and black pepper to taste.

9. Garnish with fresh parsley and serve hot.

Notes

This dish is best served immediately for the creamiest texture.

You can adjust the Cajun seasoning to your spice tolerance.

A splash of milk or cream helps loosen the sauce when reheating leftovers.
