Ingredients
2 large ripe pears
1/2 cup brown sugar
1/4 cup butter
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
2 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground ginger
1/2 cup milk
1 teaspoon vanilla extract
Instructions
1. Grease a cake pan and pour in melted butter and brown sugar. Arrange sliced pears in a fan pattern on top.
2. In a bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and ginger.
3. In a separate bowl, beat butter and granulated sugar until fluffy. Add eggs one at a time, then stir in vanilla.
4. Gradually add dry ingredients and milk to the butter mixture, alternating and mixing until just combined.
5. Pour batter over the pears and smooth the top.
6. Bake at 350°F (175°C) for 40–45 minutes until a toothpick comes out clean.
7. Let cool for 10 minutes in the pan, then invert onto a plate while warm.
8. Serve warm with whipped cream, ice cream, or on its own.
Notes
Use Bosc or Anjou pears for the best shape and flavor.
