Description

Ingredients
1 can salmon (14.75 oz), drained
1 large egg
⅓ cup breadcrumbs
2 tablespoons green onion, finely chopped
2 tablespoons bell pepper, finely chopped
1 teaspoon Old Bay seasoning
1 teaspoon lemon juice
¼ teaspoon salt
¼ teaspoon black pepper
Oil for frying (vegetable or canola)
Instructions
1. Drain the canned salmon and place it in a bowl. Remove skin and bones if desired, and flake with a fork.
2. Add green onion, bell pepper, Old Bay seasoning, lemon juice, salt, and pepper.
3. Add the egg and breadcrumbs to the mixture and stir until combined.
4. Shape the mixture into 6 to 8 round patties, about palm-sized.
5. Heat oil in a skillet over medium heat.
6. Fry croquettes 3–4 minutes per side until golden and crispy.
7. Transfer to a paper towel-lined plate to drain.
8. Serve hot with your favorite sides or sauces.
Notes
These croquettes can be made ahead and refrigerated before frying.
For a gluten-free version, use almond flour or GF breadcrumbs.
Use an air fryer to reheat and keep them crispy without extra oil.
