Description

Smoked Armadillo Eggs recipe combines jalapeños, cheese, sausage, and bacon into a smoky, spicy, and cheesy BBQ appetizer. Perfect for cookouts, tailgates, and gatherings, this easy-to-make smoked jalapeño appetizer is sure to impress.


Ingredients

8 fresh jalapeños

8 ounces cream cheese

1 cup shredded cheddar cheese

1 pound ground pork sausage

8 slices bacon


Instructions

1. Slice each jalapeño in half lengthwise and remove seeds and membranes. In a bowl, mix cream cheese and shredded cheddar until smooth. Stuff each jalapeño half with the cheese mixture. Flatten a portion of sausage and wrap it completely around each stuffed jalapeño. Wrap each sausage-covered jalapeño with a slice of bacon, overlapping slightly. Preheat smoker to 250°F. Place wrapped jalapeños on smoker grate and cook for 2–2.5 hours until bacon is crisp and sausage is cooked through.

Notes

Use larger jalapeños if you prefer less heat. For crispier bacon, increase smoker temp slightly at the end. Experiment with cheese blends for unique flavors.
