This Slow Cooker Pot Roast with Onion Soup is the ultimate comfort food. Ingredients
3 to 4 lb chuck roast
1 packet dry onion soup mix
2 cups beef broth
4 large carrots, peeled and cut into chunks
1.5 lb baby potatoes, halved
1 medium onion, sliced
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
Salt and black pepper, to taste
Instructions
1. Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned.
2. Place chopped onion, carrots, and potatoes in the bottom of your slow cooker.
3. Place the seared roast on top of the vegetables.
4. Sprinkle the dry onion soup mix evenly over the roast.
5. In a bowl, mix beef broth with Worcestershire sauce and pour it around the roast.
6. Add minced garlic, salt, and pepper.
7. Cover and cook on low for 8 to 9 hours or on high for 4 to 5 hours.
8. Once cooked, remove roast and vegetables. Serve with the juices or make a quick gravy by thickening the liquid.
Notes
This recipe freezes well for up to 3 months.
Leftovers make incredible sandwiches the next day.
You can add celery or mushrooms for extra flavor depth.
