Ingredients
1 1/2 cups shredded rotisserie chicken
6 flour tortillas
2 cups red enchilada sauce
2 cups shredded cheese (cheddar or Mexican blend)
1/2 cup sour cream
1/4 cup chopped green onions
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1 tablespoon olive oil
Instructions
1. Preheat your oven to 375°F and lightly grease a 9×13 baking dish with olive oil.
2. In a bowl, combine shredded rotisserie chicken, 1 cup of shredded cheese, sour cream, cumin, and garlic powder until well mixed.
3. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
4. Pour enchilada sauce over the tortillas, spreading evenly to coat.
