This Simple Rotisserie Chicken and Rice Casserole is the perfect weeknight comfort food. With juicy rotisserie chicken, creamy mushroom soup, and melted cheddar cheese, it’s an easy chicken casserole packed with flavor. Great for meal prep, family dinners, or using up leftover rotisserie chicken.
Ingredients
2 cups shredded rotisserie chicken
2 cups cooked white rice
1 can cream of mushroom soup (10.5 oz)
1 cup sour cream
1 cup shredded cheddar cheese (divided)
1 cup frozen peas
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
Instructions
1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
2. In a large mixing bowl, combine shredded chicken, cooked rice, cream of mushroom soup, sour cream, peas, garlic powder, salt, and pepper. Mix well.
3. Stir in half of the shredded cheddar cheese.
4. Spread the mixture into the baking dish and top with the remaining cheese.
5. Bake uncovered for 25–30 minutes, until cheese is melted and bubbly around the edges.
6. Let rest for 5 minutes before serving.
Notes
Use freshly cooked or day-old rice for the best texture.
Add extra veggies like diced carrots or broccoli for more nutrition.
