Ingredients
120 g dark chocolate (60-70%)
240 ml heavy cream
3 egg yolks
50 g granulated sugar
30 g unsalted butter
1 tsp vanilla extract
Instructions
1. Roughly chop the dark chocolate and melt it using a double boiler. Stir until smooth, then set aside to cool slightly.
2. In a small saucepan over low heat, whisk together the egg yolks and sugar until thickened and pale, about 5 minutes. Remove from heat.
3. Gradually whisk the melted chocolate into the yolk mixture until fully combined. Stir in butter and vanilla extract until smooth.
4. Whip the heavy cream to soft peaks in a chilled bowl. Fold half into the chocolate mixture to lighten it, then fold in the remaining cream.
5. Spoon into serving glasses or bowls and refrigerate for at least 2 hours until set. Serve as is or topped with whipped cream, berries, or chocolate shavings.
