Description

Sicilian Meatloaf is a flavorful twist on the classic dish, packed with ground beef, ground pork, mozzarella, spinach, and roasted red peppers. This Italian-style meatloaf is the perfect comfort food dinner recipe that’s juicy, cheesy, and easy to make for weeknights or gatherings. Serve it with garlic mashed potatoes or fresh salad for a complete Sicilian-inspired meal.


Ingredients

1 lb ground beef

1 lb ground pork

1 cup breadcrumbs

2 eggs

1/2 cup grated parmesan cheese

3 cloves garlic, minced

1/4 cup chopped fresh parsley

2 cups fresh spinach

1/2 cup roasted red peppers, chopped

1 1/2 cups shredded mozzarella cheese

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil


Instructions

1. Sauté spinach, garlic, and roasted red peppers in olive oil over medium heat until tender. Let cool.

2. In a large bowl, mix ground beef, ground pork, breadcrumbs, eggs, parmesan, parsley, salt, and pepper until just combined.

3. On parchment paper, spread meat mixture into a large rectangle.

4. Add cooled vegetables and mozzarella on top of meat layer.

5. Carefully roll the meat into a loaf shape using the parchment as a guide.

6. Transfer to a baking dish, drizzle with olive oil.

7. Bake at 375°F (190°C) for 45–60 minutes or until internal temp reaches 160°F (71°C).

8. Let rest for 10 minutes before slicing and serving.

Notes

This recipe can be made ahead and frozen in slices for easy reheating.

Use fresh mozzarella for an extra melty center.

Avoid overmixing the meat mixture to keep it tender.
