2 shallots, finely chopped

2 ribs celery, diced

1 teaspoon Old Bay seasoning
6 ounces cooked lobster meat
8 ounces raw shrimp, peeled and deveined

1 can refrigerated biscuit dough (8 biscuits)
1 tablespoon melted butter (for brushing)
Instructions
1. Melt butter in a large skillet over medium heat. Add shallots, garlic, carrots, and celery. Cook until softened and fragrant, about 5 minutes.
2. Sprinkle flour over the vegetables and stir to coat evenly. Cook for 1 to 2 minutes.
3. Pour in the white wine and simmer until reduced by half. Add seafood stock and bring to a light simmer.
4. Reduce heat to low. Stir in heavy cream and Old Bay seasoning. Add shrimp and lobster meat. Simmer until shrimp are opaque. Stir in thyme.
5. Preheat oven to 375°F. Place biscuits over the filling. Brush biscuit tops with melted butter.
