Ingredients
8 large sea scallops
1 tablespoon olive oil
2 tablespoons butter, divided
1 cup heavy cream
2 cloves garlic, minced
1 tablespoon Cajun seasoning
1 tablespoon lemon juice
1/4 cup grated Parmesan cheese
Salt and pepper to taste
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Pat scallops dry with paper towels and season lightly with salt and pepper.
2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat.
3. Sear scallops for 2 minutes per side until golden brown. Remove and set aside.
4. Lower heat to medium and add remaining butter and minced garlic. Sauté for 30 seconds.
5. Pour in heavy cream, Cajun seasoning, and lemon juice. Simmer for 3–5 minutes.
6. Stir in Parmesan cheese until melted and sauce is smooth.
7. Return scallops to pan and warm through, spooning sauce over them.
8. Garnish with parsley and serve immediately.

Serve immediately to maintain scallop tenderness.
For a thinner sauce, add a splash of broth or more lemon juice.
Use dry-packed scallops for the best sear.
