Ingredients
1 pound ground beef
10 ounces cheese tortellini
3 cups baby spinach
4 cloves garlic, minced
3 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese
Instructions
1. Heat a large skillet over medium heat. Add olive oil and ground beef. Cook until browned and crispy, seasoning with salt and pepper as it cooks. Remove and set aside.
2. In a separate pot, bring salted water to a boil. Cook tortellini according to package instructions. Drain and set aside.
3. In the same skillet, melt butter over medium-low heat. Add garlic and stir until fragrant, about 1 minute.
4. Pour in heavy cream and let it simmer until slightly thickened.
5. Add the cooked tortellini and browned beef into the skillet. Stir to coat everything in the sauce.
6. Toss in the baby spinach and cook until just wilted.
7. Adjust seasoning if needed, then sprinkle with grated Parmesan before serving hot.
Notes
This dish tastes best fresh, but you can prep components in advance.
To lighten the sauce, use half-and-half instead of heavy cream.
