Ingredients
2 tablespoons olive oil
2 tablespoons butter
1 large yellow onion, thinly sliced
16 ounces mushrooms, sliced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon fresh thyme leaves (optional)
Instructions
1. Clean mushrooms with a damp cloth and slice evenly. Peel and slice onion. Mince garlic and set aside.
2. In a large skillet over medium heat, heat olive oil and butter until butter melts and foams.
3. Add sliced onions and a pinch of salt. Cook, stirring occasionally, until soft and golden, about 10–12 minutes.
4. Add sliced mushrooms. Let them sear without stirring for a few minutes. Cook until golden and reduced in size, about 8–10 minutes.
5. Add garlic and cook 1–2 minutes until fragrant. Season with salt and pepper.
6. Turn off heat and stir in fresh thyme if using. Serve hot.
Notes
This dish is perfect for meal prep and reheats well in a skillet.
Use a mix of mushroom types for a more complex flavor.
Avoid overcrowding the pan to keep mushrooms from steaming.
