Ingredients
8 oz breakfast sausage
6 large eggs
2 cups whole milk
1 ½ cups shredded cheddar cheese
4 cups day-old bread cubes
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon chopped chives (optional)
1 tablespoon chopped parsley (optional)
Instructions
1. In a skillet over medium heat, cook the sausage until browned and crumbled. Drain any excess fat and set aside to cool.
2. In a large bowl, whisk together the eggs, milk, salt, and pepper until smooth.
3. In a greased 9×13-inch baking dish, evenly layer the bread cubes. Sprinkle the cooked sausage on top.
4. Pour the egg mixture evenly over the bread and sausage. Top with shredded cheese and optional herbs.
5. Cover the dish and refrigerate for at least 6 hours or overnight to allow the bread to absorb the egg mixture.
6. Preheat the oven to 350°F (175°C). Bake uncovered for 45 to 50 minutes until the top is golden and the center is set.
7. Remove from the oven and let the casserole rest for 10 minutes before slicing and serving.

Letting the casserole sit overnight enhances the flavor and texture.
You can substitute milk with half-and-half for a richer taste.
