Description

Ingredients

12 oz large shrimp, peeled and deveined

2 tbsp lemon juice

1 tsp lemon zest

2 tbsp olive oil

2 garlic cloves, minced

1 tbsp chopped fresh parsley

1 tsp chopped fresh thyme

1/4 tsp salt

1/4 tsp black pepper

1 cup diced strawberries

2 tbsp finely chopped red onion

2 tbsp thinly sliced fresh basil

1 tsp balsamic vinegar


Instructions

1. In a medium bowl, whisk together lemon juice, zest, olive oil, garlic, parsley, thyme, salt, and pepper.

2. Add the shrimp to the bowl and toss to coat. Marinate in the refrigerator for 15 to 30 minutes.

3. While the shrimp is marinating, prepare the salsa. Combine strawberries, red onion, basil, and balsamic vinegar in a bowl. Gently stir and let sit to develop flavor.

4. Heat a skillet over medium-high heat and add a drizzle of olive oil. Cook the shrimp in a single layer for 2 to 3 minutes on each side until golden and cooked through.

5. Serve shrimp hot with a generous scoop of the strawberry-basil salsa. Garnish with lemon wedges or fresh herbs if desired.

Notes

This dish is best served fresh, but shrimp can be cooked ahead.

Keep salsa separate until serving to preserve freshness.
