Ingredients
3 cups all-purpose flour
1 ½ teaspoons salt
½ teaspoon instant yeast
1 ½ cups warm water
1 tablespoon fresh rosemary, chopped
1 head roasted garlic, cloves mashed
Instructions
1. In a large bowl, mix flour, salt, and instant yeast until combined.
2. Add chopped rosemary and mashed roasted garlic to the bowl and stir.
3. Pour in warm water and stir until a shaggy, sticky dough forms.
4. Cover the bowl with plastic wrap or a clean towel and let rest at room temperature for 12–18 hours.
5. Once risen and bubbly, turn the dough onto a floured surface and gently fold it into a ball.
6. Place the dough on parchment paper and let it rest for 30–45 minutes.
7. Preheat a Dutch oven with the lid on at 450°F (230°C) for 30 minutes.
8. Carefully transfer the dough (with parchment paper) into the Dutch oven. Cover and bake for 30 minutes.
9. Remove the lid and bake for another 10–15 minutes until golden brown.
10. Let the bread cool on a wire rack for at least 30 minutes before slicing.
Notes
Letting the dough ferment overnight develops deep flavor and texture.
Use fresh rosemary for maximum aroma—dried doesn’t deliver the same punch.
Roast garlic ahead of time for the best caramelized, mellow flavor.
