Description

Ingredients

3 large eggs

½ cup granulated sugar

¾ cup all-purpose flour

¼ teaspoon salt

1 teaspoon vanilla extract

8 oz mascarpone cheese

¾ cup heavy whipping cream

½ cup powdered sugar

1 cup fresh berries (optional)

Powdered sugar, for dusting


Instructions

1. Preheat the oven to 350°F (175°C) and line a jelly roll pan with parchment paper.

2. In a bowl, whisk the eggs and granulated sugar until pale and fluffy, about 5 minutes.

3. Sift in the flour and salt, then gently fold with a spatula to avoid deflating the batter.

4. Stir in the vanilla extract and mix just until combined.

5. Pour the batter into the pan and spread it evenly. Bake for 10 minutes, until the top is springy.

6. While warm, invert the cake onto a powdered sugar-dusted towel and peel off the parchment.

7. Roll the cake up gently with the towel and let it cool completely in this shape.

8. To make the filling, beat the mascarpone with powdered sugar and vanilla until smooth.

9. Add heavy cream and whip until soft peaks form and mixture is thick but spreadable.

10. Unroll the cooled cake, spread the filling evenly, and sprinkle berries on top if using.

11. Roll the cake back up tightly, seam side down, and refrigerate for at least 1 hour.

12. Dust with powdered sugar before slicing and serving.

Notes

Let the cake cool fully while rolled to prevent cracks.

You can substitute mascarpone with cream cheese if needed.
