Ingredients
1 ½ pounds Brussels sprouts
2 tablespoons olive oil
¾ teaspoon salt
½ teaspoon black pepper
Instructions
1. Trim the ends off the Brussels sprouts and slice them in half. Keep any loose leaves.
2. Preheat the oven to 425°F (220°C).
3. Place the Brussels sprouts on a baking sheet and drizzle with olive oil.
4. Sprinkle with salt and pepper. Toss until everything is evenly coated.
5. Arrange the sprouts cut-side down in a single layer on the baking sheet.
6. Roast for 20 to 25 minutes, only stirring in the last 5 minutes if needed.
7. Remove when golden brown and crispy on the edges, and fork-tender.
8. Serve hot as a side dish or add your favorite toppings like balsamic glaze or parmesan.
Notes
Roast Brussels sprouts cut-side down for extra crisp edges.
Avoid overcrowding the pan or they’ll steam instead of roast.
To reheat, use the oven instead of the microwave to bring back the crisp.
