Description

This Roasted Apple and Brie Panini is the perfect cozy gourmet sandwich with sweet roasted apples, creamy brie, and crispy golden bread. A simple lunch or brunch idea ready in under 20 minutes. Ingredients

2 slices sourdough or ciabatta bread

1 small apple (such as Honeycrisp or Fuji), thinly sliced

2 ounces brie cheese, sliced

1 tablespoon butter

1 teaspoon Dijon mustard or honey

1 teaspoon fresh thyme leaves (optional)


Instructions

1. Preheat oven to 400°F. Arrange thinly sliced apple on a parchment-lined baking sheet. Roast for 10–12 minutes until softened and golden.

2. Butter one side of each slice of bread. On the other side, spread Dijon mustard or honey.

3. Layer brie slices and roasted apple on one slice of bread, sprinkle thyme if using, and top with the second slice, buttered side out.

4. Heat a panini press or skillet over medium. Grill sandwich for 3–4 minutes per side, until bread is golden and cheese is melted.

5. Let rest for a minute, then slice and serve warm.

Notes

You can prep the roasted apples up to 2 days ahead for a quicker build.
