Ingredients
8 ounces fettuccine or linguine pasta
2 boneless skinless chicken breasts
2 tablespoons Cajun seasoning
2 tablespoons olive oil
2 cloves garlic minced
1 jalapeño thinly sliced
1 bell pepper thinly sliced
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt to taste
Extra Parmesan and jalapeño for garnish (optional)
Instructions
1. Cook the pasta in salted boiling water until al dente. Reserve some pasta water, then drain.
2. Season chicken with Cajun seasoning and cook in olive oil in a skillet over medium-high heat until golden and cooked through. Remove and set aside.
3. In the same skillet, sauté garlic, jalapeño, and bell pepper until tender and fragrant.
4. Reduce heat, add heavy cream, and simmer gently. Stir in Parmesan until melted. Taste and adjust seasoning.
5. Return chicken to skillet and add cooked pasta. Toss well to coat. Garnish with extra Parmesan and jalapeño slices if desired. Serve hot.
Notes
Use shrimp instead of chicken for a seafood version.
Adjust the jalapeño quantity to control the heat.
Reheat leftovers with a splash of cream to revive the sauce.
