Description

Ingredients

500g chicken thighs or breasts

1 ½ cups cherry tomatoes

¾ cup Kalamata olives

1 medium red onion, sliced

4 garlic cloves, whole or smashed

1 teaspoon dried oregano

½ teaspoon dried thyme

2 tablespoons olive oil

¼ teaspoon salt

¼ teaspoon black pepper

½ cup crumbled feta cheese (optional)


Instructions

1. Preheat oven to 400°F (200°C).

2. Season chicken with salt, pepper, oregano, and thyme.

3. In a large baking dish, combine cherry tomatoes, red onion, garlic, and olives. Drizzle with olive oil and toss to coat.

4. Nestle seasoned chicken into the dish among the vegetables.

5. Bake uncovered for 30–35 minutes, until chicken is cooked through and tomatoes are soft and juicy.

6. Optionally sprinkle with crumbled feta and fresh herbs before serving.

7. Serve hot with rice, couscous, or bread.

Notes

This dish is naturally gluten-free and low in carbs.

You can substitute the feta with goat cheese for a creamier twist.

Add artichoke hearts or roasted bell peppers for extra flavor variety.
