Description

Quick angel hair pasta salad with fresh veggies and herbs is a light, vibrant summer dish. Easy to make, full of lemony flavor, basil, and crisp vegetables, perfect as a side or main meal.


Ingredients

250 g angel hair pasta

200 g cherry tomatoes halved

1 medium cucumber diced

1/2 small red onion thinly sliced

1/4 cup fresh basil chopped

2 tablespoons fresh parsley chopped

3 tablespoons olive oil

2 tablespoons lemon juice

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to boil and cook angel hair pasta until al dente. Drain and rinse under cold water.

2. While pasta cooks, prepare vegetables: halve cherry tomatoes, dice cucumber, slice red onion, chop basil and parsley.

3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

4. Toss cooled pasta with dressing in a large bowl, then gently fold in prepared vegetables and herbs.

5. Chill the salad in the refrigerator for 15–20 minutes before serving.

Notes

Use the freshest herbs possible for maximum flavor.

You can add crumbled feta or goat cheese for creaminess.

If preparing ahead, keep dressing separate and mix before serving.
