1 teaspoon vanilla extract
¾ cup powdered sugar (for glaze)
1 tablespoon espresso powder (or instant coffee)
1 ½ tablespoons milk or cream (for glaze)
Instructions
1. Cream together the softened butter, brown sugar, and granulated sugar until fluffy.
2. Mix in the pumpkin puree, egg yolk, and vanilla extract until smooth.
3. In a separate bowl, whisk together the flour, baking soda, salt, and pumpkin pie spice.
4. Slowly add the dry ingredients into the wet and mix until fully combined.
5. Chill the dough for at least 30 minutes in the refrigerator.
6. Scoop onto a parchment-lined baking sheet and bake at 350°F for 10-12 minutes.
7. Let cookies cool completely on a rack before glazing.
8. For the glaze, whisk together powdered sugar, espresso powder, and milk until smooth.
