Ingredients
1 pound Polish sausage (kielbasa)
2 cups sauerkraut
4 medium gold or red potatoes, diced
1 large yellow onion, chopped
2 garlic cloves, minced
2 tablespoons olive oil or butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon caraway seeds (optional)
1/2 apple, sliced or grated (optional)
Instructions
1. Slice the kielbasa into thick rounds and brown them in a large skillet over medium heat.
2. Add the chopped onion and sauté until softened and lightly golden.
3. Stir in the minced garlic and diced potatoes, cooking for about 5 to 7 minutes until they begin to soften.
4. Add the sauerkraut, along with optional apple slices and caraway seeds if using. Mix everything together well.
5. Cover the skillet with a lid, reduce heat to low, and let it simmer for 20 minutes or until the potatoes are fork-tender.
6. Remove the lid, stir, and adjust seasoning with salt and pepper. Serve hot.

Use refrigerated sauerkraut for the best flavor and crunch.
A splash of broth or beer can be added during simmering for extra depth.
