Description

Ingredients

1 cup unsalted butter, softened

0.5 cup powdered sugar

1 teaspoon vanilla extract

2.25 cups all-purpose flour

0.25 teaspoon salt

0.75 cup finely chopped pistachios

0.5 cup powdered sugar, for rolling


Instructions

1. Cream the softened butter and powdered sugar in a mixing bowl using a hand or stand mixer until light and fluffy.

2. Add vanilla extract and mix until combined.

3. Slowly incorporate the flour and salt, mixing until a crumbly dough begins to form.

4. Fold in the chopped pistachios until evenly distributed.

5. If dough is too soft, chill in the fridge for 30 minutes.

6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

7. Roll the dough into 1-inch balls and place them about 1 inch apart on the baking sheet.

8. Bake for 12–14 minutes or until bottoms are lightly golden. Do not let the tops brown.

9. Allow cookies to cool for 5 minutes, then roll warm cookies in powdered sugar.

10. Once fully cooled, roll them again in powdered sugar for the perfect snowy finish.

Notes

Use raw or roasted unsalted pistachios depending on your flavor preference.

You can make the dough a day ahead and chill overnight.

Double the recipe easily for larger gatherings or cookie boxes.
