Ingredients
6 Granny Smith apples
3 cups granulated sugar
1 cup light corn syrup
1 cup water
1 teaspoon pineapple flavoring oil
1 teaspoon lemon extract
1 teaspoon yellow gel food coloring
Instructions
1. Wash and dry apples thoroughly, removing any wax. Insert sticks and line a baking sheet with parchment.
2. In a heavy-bottom saucepan, combine sugar, corn syrup, and water. Stir to combine and bring to a boil.
3. Heat the mixture without stirring until it reaches 300°F (hard crack stage) using a candy thermometer.
4. Remove from heat and stir in pineapple flavoring, lemon extract, and yellow food coloring. Be careful—it may bubble.
5. Tilt the saucepan and dip each apple into the mixture, twirling to coat evenly. Let excess drip off.
6. Place coated apples on the prepared baking sheet and allow to cool completely.
7. Serve once hardened or wrap in cellophane to store for up to 3 days at room temperature.
