Ingredients
1 pie crust
4 large eggs
1 cup whole milk
1/2 cup heavy cream
5 oz fresh spinach
3/4 cup crumbled feta cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon ground nutmeg
1 tablespoon olive oil
1 small onion, finely chopped
2 garlic cloves, minced
Instructions
1. Preheat oven to 375°F and pre-bake pie crust for 8–10 minutes until lightly golden. Let cool.
2. In a skillet, heat olive oil over medium heat. Sauté chopped onion until translucent. Add garlic and cook for 30 seconds.
3. Add fresh spinach and cook until wilted. Remove from heat and let cool slightly.
4. In a mixing bowl, whisk together eggs, milk, cream, salt, pepper, and nutmeg until smooth.
5. Spread the spinach mixture into the cooled crust and top with crumbled feta.
6. Pour the egg mixture over the filling and gently shake to settle.
7. Bake at 375°F for 35–40 minutes or until the top is golden and center is set.
8. Let the quiche cool for 10 minutes before slicing and serving.

Use fresh spinach for a brighter flavor, or frozen (thawed and drained) if needed.
Blind-bake your crust to avoid sogginess and ensure crisp edges.
