Ingredients

1.5 pounds chicken thighs

2 tablespoons butter

1 yellow onion, chopped

2 carrots, sliced

2 celery stalks, sliced

2 cloves garlic, minced

1/4 cup all-purpose flour

6 cups chicken broth

1/2 cup milk

1 cup frozen peas

1 bay leaf

1 teaspoon dried thyme

Salt and pepper to taste

1 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons chopped fresh parsley

1/2 cup milk


Instructions

1. Melt butter in a large pot over medium heat. Add onion, carrots, and celery. Sauté until softened, about 5-6 minutes. Stir in the garlic and cook for another minute.

2. Add chicken thighs and season with salt, pepper, and thyme. Brown lightly on both sides, then sprinkle in the flour and stir to coat the ingredients.

3. Gradually pour in chicken broth while stirring constantly. Add bay leaf. Bring to a simmer and cook for 20 minutes until the chicken is tender.

4. While the soup simmers, make the dumpling dough by mixing flour, baking powder, salt, and parsley in a bowl. Stir in the milk until a soft dough forms.

5. Use two spoons to drop dumpling dough over the simmering soup. Cover and cook for 15 minutes or until dumplings are fluffy and fully cooked.

6. Stir in frozen peas and let them warm through for 5 minutes. Remove the bay leaf. Adjust seasoning and serve hot.

Notes

Make sure not to overmix the dumpling dough to keep them light and fluffy.

For a thicker broth, you can add an extra tablespoon of flour at the start.

Swap frozen peas with corn or green beans for a twist.
