Description

This easy creamy pea salad is the perfect side dish for summer. Made with sweet green peas, crispy bacon, sharp cheddar cheese, and a tangy mayo-based dressing, it’s ideal for BBQs, potlucks, and quick lunches. Naturally gluten-free and customizable, this cold pea salad recipe is a family favorite!


Ingredients

1 16-ounce bag frozen green peas, thawed

6 slices bacon, cooked and crumbled

1/2 small red onion, finely diced

3/4 cup cubed sharp cheddar cheese

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon apple cider vinegar

1 teaspoon sugar (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Thaw frozen peas in a colander and pat them dry. If using fresh peas, blanch them for 1–2 minutes and cool in an ice bath.

2. Cook the bacon until crispy, then drain and crumble into small pieces.

3. Dice the red onion and cube the cheddar cheese.

4. In a separate bowl, whisk together mayonnaise, sour cream, apple cider vinegar, sugar, salt, and pepper.

5. In a large mixing bowl, combine peas, bacon, onion, and cheddar. Pour dressing over the top and toss gently.

6. Chill in the fridge for at least 30 minutes before serving.

Notes

Use frozen peas for best texture and color.

Letting the salad chill enhances the flavor.

Swap sour cream with Greek yogurt for a lighter twist.
