Description
This oven-roasted Cajun chicken and garlic potatoes with parmesan is an easy one-pan dinner packed with spicy Cajun flavor, crispy roasted potatoes, and melty parmesan. A perfect weeknight chicken recipe with bold seasoning and minimal cleanup.
Ingredients
4 bone-in, skin-on chicken thighs
1.5 pounds baby potatoes
3 tablespoons olive oil
2 tablespoons Cajun seasoning
4 garlic cloves, minced
1/3 cup grated parmesan cheese
2 tablespoons chopped fresh parsley
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil. Pat the chicken thighs dry.
2. In a large bowl, coat chicken thighs with 1 tablespoon olive oil, Cajun seasoning, salt, and pepper. Mix until well coated.
3. Halve baby potatoes and toss with remaining olive oil, minced garlic, and a pinch of salt and pepper.
4. Arrange chicken skin-side up and potatoes on the same sheet pan, keeping everything in a single layer.
5. Roast for 35–40 minutes or until chicken is golden and fully cooked, and potatoes are crispy.
6. Sprinkle grated parmesan over the potatoes during the last 5 minutes of roasting.
7. Remove from oven, garnish with chopped parsley, and serve hot.
Notes
Roast chicken skin-side up to get it extra crispy.
Don’t overcrowd the pan—space helps everything crisp up better.
Add parmesan at the end so it melts and browns without burning.
