Ingredients
2 large chicken breasts
4 slices thin-sliced ham
4 slices Swiss cheese
1 cup breadcrumbs
¼ cup grated Parmesan cheese
2 eggs
½ cup all-purpose flour
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon Dijon mustard (optional)
2 tablespoons melted butter
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
2. Butterfly the chicken breasts and pound them between plastic wrap until about ½ inch thick.
3. Layer a slice of ham and a slice of cheese on each piece of chicken.
4. Roll up the chicken tightly, tucking in sides to seal in the filling.
5. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs and Parmesan.
6. Dredge each chicken roll in flour, dip in eggs, and coat in breadcrumb mixture.
7. Place rolls seam-side down in prepared dish. Drizzle with melted butter.
8. Bake for 30–35 minutes or until golden brown and internal temperature reaches 165°F (74°C).
9. Let rest 5 minutes before slicing and serving.
