Ingredients

1 3/4 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

3/4 cup granulated sugar

1 tablespoon orange zest

3/4 cup orange juice

1/3 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 1/4 cups fresh or frozen cranberries


Instructions

1. Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.

2. In a large bowl, whisk together the flour, baking powder, and salt.

3. In a separate bowl, mix together the sugar, orange zest, orange juice, oil, egg, and vanilla until fully combined.

4. Pour the wet mixture into the dry ingredients and stir until just combined.

5. Fold in the cranberries, ensuring they’re evenly distributed.

6. Pour the batter into the prepared pan and bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.

7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

This bread freezes well—wrap slices individually and store in a freezer bag.

Use fresh or frozen cranberries; no need to thaw if using frozen.

For added flair, drizzle a simple glaze of powdered sugar and orange juice on top once cooled.
