Ingredients
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
½ teaspoon crushed red pepper flakes
½ cup sun-dried tomatoes, chopped
1 pound shrimp, peeled and deveined
1 cup orzo pasta
2 cups chicken broth
½ cup heavy cream
½ cup parmesan cheese, grated
1 teaspoon Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons fresh basil, chopped (optional)
Instructions
1. Heat olive oil and butter in a large skillet or pot over medium heat.
2. Add garlic, red pepper flakes, and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
3. Add shrimp, season with salt and pepper, and cook for 1-2 minutes per side until just cooked through. Remove and set aside.
4. Add orzo to the same pot, stirring to coat in the oil. Toast for 1-2 minutes.
5. Pour in chicken broth. Bring to a simmer and cook, stirring occasionally, until orzo is tender and most liquid is absorbed.
6. Stir in heavy cream, parmesan, and Italian seasoning. Cook until creamy and thickened.
7. Return shrimp to the pot, stir everything together, and adjust seasoning.
8. Garnish with fresh basil and serve warm.
Notes
Use large shrimp to avoid overcooking.
Don’t overcook the orzo or it will turn mushy.
Add a splash of broth or cream when reheating leftovers.
