Ingredients
2 chicken breasts, boneless and skinless
2 tablespoons olive oil
4 cloves garlic, minced
2 cups chicken broth
1 cup milk
1 cup heavy cream
1 cup freshly grated parmesan cheese
12 ounces penne pasta
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced chicken, season with salt and pepper, and sear until golden and cooked through. Remove and set aside.
2. In the same pan, add a bit more olive oil if needed and sauté minced garlic until fragrant.
3. Pour in chicken broth, milk, and heavy cream. Scrape up any brown bits and bring to a simmer.
4. Stir in uncooked penne pasta. Let cook uncovered for about 13-15 minutes, stirring occasionally, until pasta is tender and sauce thickens.
5. Return chicken to the pot, stir in grated parmesan, and simmer for another 2-3 minutes.
6. Taste and adjust seasoning.
7. Garnish with fresh parsley and serve warm.
