Description

This creamy One Pot Cajun Chicken and Broccoli Alfredo Bowl is a spicy, satisfying weeknight dinner made in just one skillet. Loaded with Cajun-spiced chicken, fresh broccoli, and rich Parmesan Alfredo sauce, it’s perfect for busy nights and easy cleanup. A flavorful chicken pasta dinner with a bold Southern twist.


Ingredients

1 pound chicken breast, diced

1 tablespoon Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

2 cups broccoli florets

8 ounces pasta (penne or fettuccine work well)

2 cups chicken broth

1 cup heavy cream

1 cup Parmesan cheese, grated

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Heat olive oil in a large skillet over medium-high heat. Season diced chicken with Cajun seasoning and sear until golden and fully cooked. Remove and set aside.

2. In the same skillet, lower heat to medium and add garlic. Sauté until fragrant, then stir in the broccoli. Cook for 2 to 3 minutes.

3. Pour in chicken broth and bring to a simmer. Add the uncooked pasta and cook uncovered, stirring occasionally, until pasta is al dente and most liquid is absorbed.

4. Stir in heavy cream and Parmesan cheese. Let the sauce simmer and thicken. Add salt and pepper to taste.

5. Return the cooked chicken to the skillet. Stir everything together and warm through. Serve hot, garnished with extra Parmesan or a sprinkle of Cajun seasoning.

Notes

Add more Cajun seasoning for extra spice if desired.

Use any short or long pasta depending on preference.

For extra veggies, add sliced mushrooms or bell peppers.
