Ingredients
2 large chicken breasts
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon butter
4 garlic cloves, minced
8 ounces mushrooms, sliced
1 cup chicken broth
1 cup heavy cream
1⁄2 cup freshly grated parmesan cheese
1 teaspoon Italian seasoning
2 tablespoons chopped fresh parsley
Instructions
1. Season chicken breasts on both sides with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat and sear chicken until golden on both sides, about 5–6 minutes per side. Remove and set aside.
3. Reduce heat to medium. Add butter to the same skillet, then stir in sliced mushrooms. Cook until tender and browned.
4. Add minced garlic and cook for 1 minute until fragrant.
5. Pour in chicken broth and scrape the bottom of the pan to deglaze.
6. Stir in heavy cream and parmesan cheese. Let the sauce simmer and thicken slightly.
7. Add Italian seasoning and adjust seasoning if needed.
8. Return the chicken to the skillet and let it simmer in the sauce for about 5 minutes or until fully cooked through.
9. Garnish with chopped parsley and serve hot.
Notes
Always sear your chicken well to lock in flavor.
Use freshly grated parmesan for best melting and flavor.
If the sauce thickens too much, thin it with a splash of broth or cream.
