Ingredients
3 cups whole milk
¾ cup granulated sugar
⅓ cup all-purpose flour
¼ teaspoon salt
3 large egg yolks
2 tablespoons butter
1½ teaspoons vanilla extract
4 ripe bananas
1 box vanilla wafers
Instructions
1. In a saucepan, whisk together sugar, flour, and salt.
2. Slowly pour in the milk while whisking constantly to avoid lumps.
3. Cook over medium heat, stirring until the mixture thickens.
4. In a separate bowl, beat the egg yolks.
5. Add a small amount of the hot milk mixture into the yolks to temper.
6. Pour the tempered yolks back into the saucepan, stirring continuously.
7. Cook until the pudding is thick enough to coat the back of a spoon.
8. Remove from heat and stir in butter and vanilla extract until smooth.
9. In a serving dish, layer vanilla wafers, banana slices, and warm custard.
10. Repeat the layers, ending with custard on top.
11. Serve warm or refrigerate for a few hours before serving chilled.
Notes
Use ripe but firm bananas to avoid mushy texture.
For extra decadence, top with whipped cream or meringue.
Letting it sit overnight enhances the flavor even more.
