Ingredients
4 buns
1 lb ground beef (80/20)
2 medium sweet onions, thinly sliced
4 slices American cheese
1 tsp salt
1/2 tsp black pepper
1 tbsp butter or oil
Instructions
1. Slice sweet onions very thin using a mandoline or knife.
2. Form 4 loose balls from ground beef, about 4 oz each.
3. Heat a cast-iron skillet or griddle over medium-high heat and lightly grease with oil or butter.
4. Place a mound of onions onto the skillet, then smash a beef ball directly on top using a spatula. Press firmly to flatten.
5. Cook without moving for 2–3 minutes until the edges are browned and onions are beginning to crisp.
6. Flip the patty with onions and cook for another 1–2 minutes. Add cheese and allow to melt.
7. Toast burger buns with butter in the skillet until golden.
8. Assemble each burger on a toasted bun and serve hot. Add mustard, pickles, or condiments as desired.
Notes
Use a mandoline for perfectly thin onion slices that cook evenly.
Don’t press down after flipping or you’ll lose juices.
