Ingredients
8 oz cream cheese, softened
1 cup peanut butter (smooth)
1 cup powdered sugar
1 cup graham cracker crumbs
1 teaspoon vanilla extract
1 ½ cups chocolate chips
1 teaspoon coconut oil (optional)
Instructions
1. In a large mixing bowl, beat the softened cream cheese until smooth.
2. Add the peanut butter and vanilla extract, mixing until fully combined.
3. Slowly beat in powdered sugar and graham cracker crumbs until thick and scoopable.
4. Scoop and roll into balls using a spoon or small cookie scoop.
5. Place on a parchment-lined baking sheet and freeze for 30 minutes.
6. Melt the chocolate chips with coconut oil (if using) in a microwave-safe bowl.
7. Dip chilled balls in melted chocolate using a fork to coat evenly.
8. Let excess chocolate drip off, place back on parchment, and chill until set.
