Description

Ingredients

1 pound chicken thighs

1/4 cup soy sauce

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon rice vinegar

1 tablespoon cornstarch

1/2 cup water

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup carrots, julienned

1 cup snap peas

2 green onions, chopped

1 teaspoon sesame oil

2 cups cooked wild rice

1 tablespoon sesame seeds


Instructions

1. Cook the wild rice according to package directions; this takes about 30–40 minutes. Set aside once fluffed.

2. In a bowl, whisk together soy sauce, honey, rice vinegar, garlic, and ginger. In a separate cup, mix cornstarch with water, then stir into the sauce to thicken.

3. Heat sesame oil in a large skillet over medium-high heat. Sear chicken pieces until browned and cooked through. Remove and set aside.

4. Add more sesame oil to the skillet, if needed. Stir-fry the bell peppers, carrots, and snap peas for 4–5 minutes until tender-crisp.

5. Return chicken to the pan and pour in the teriyaki sauce. Stir well and let it simmer until the sauce thickens and coats everything.

6. Serve the stir-fry over warm wild rice. Garnish with chopped green onions and sesame seeds. Serve hot.

Notes

This dish is great for meal prep and holds up well in the fridge.

If using chicken breast, be careful not to overcook—it dries out faster than thighs.

For extra flavor, marinate the chicken in a bit of teriyaki sauce before cooking.
