Ingredients
1 ½ cups unsweetened applesauce
2 cups all-purpose flour
¾ cup brown sugar
½ cup granulated sugar
½ cup vegetable oil
½ cup buttermilk
2 large eggs
1 ½ teaspoons baking soda
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
1 teaspoon vanilla extract
Instructions
1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking pan.
2. In a large bowl, whisk together the applesauce, oil, buttermilk, eggs, and vanilla until smooth.
3. In a separate bowl, mix flour, brown sugar, granulated sugar, baking soda, cinnamon, nutmeg, and salt.
4. Gradually stir dry ingredients into wet ingredients until just combined. Do not overmix.
5. Pour batter into prepared pan and smooth the top.
6. Bake for 40–45 minutes, or until a toothpick inserted comes out clean.
7. Cool in the pan before slicing. Serve plain or with cream cheese frosting.
Notes
Store in an airtight container at room temperature for up to 3 days.
For a richer flavor, add chopped walnuts or raisins into the batter.
Can be frozen for up to 2 months if wrapped well.
