Ingredients
1 cup peanut butter
1/2 cup unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 and 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup M&Ms (plus more for topping)
Instructions
1. Cream together the peanut butter, unsalted butter, brown sugar, and granulated sugar until smooth and fluffy.
2. Mix in the egg and vanilla extract until fully incorporated.
3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients.
4. Gently fold in most of the M&Ms, reserving some for topping.
5. Scoop dough into tablespoon-sized balls and place on a parchment-lined baking sheet. Press extra M&Ms on top.
6. Bake at 350°F (175°C) for 10–12 minutes, until edges are golden.
7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Notes
These cookies freeze beautifully both as dough or after baking.
Try mixing in chopped peanuts or chocolate chips for a twist.
